In the winter months, I love taking out my crock pot and preparing stews and soups. There’s something about throwing the items into one pot, leaving it to cook and then coming home to a house filled with the aroma of a delicious meal that is simply wonderful.
In this recipe the One Pot Chef shows how to make his version of crock-pot chicken by taking some simple ingredients, dropping them in the pot and letting them stew and simmer.
Here’s the ingredients you’ll need:
2 pounds (1kg) of chicken breast fillets
1.2 pounds (600g) of small red potatoes, quartered
half-pound (250g) of baby carrots (trimmed and peeled)
1/4 cup of olive oil
1/3 cup of freshly-squeezed lemon juice
1 teaspoon of dried oregano
1 teaspoon of onion powder
2 teaspoons of crushed garlic
1 teaspoon of salt
freshly-cracked black pepper to taste
Throw all of items into your crock pot and let it cook on the “Low” setting for 8 hours or 4 hours on “High”. There’s so little effort involved, how could you not want to try it?
