There are many recipes these days that have foods that have been cut “Hasselback” style, like potatoes and apples, so why not chicken?
In the following recipe, you will learn how to make tasty chicken breasts stuffed with spinach and cheese that the whole family is sure to love.
Here are the ingredients you’ll need:
1 tsp. olive oil
1½ cups fresh baby spinach
¼ cup ricotta cheese
2 1lb chicken breasts
1/8 cup white cheddar cheese, grated
Paprika
Salt & pepper
Preheat your oven to 400°F /200°C.
Next, place a saute pan over medium heat. When the pan is hot, add your oil and cook the spinach for about 3 to 5 minutes until the leaves are slightly wilted. Then stir in the ricotta cheese. Mix it together and cook for another 30 to 60 seconds. Remove it from the heat and let it cool.
Take your chicken breasts and cut slits into the breast about 1 centimeter (1/2 inch) apart and about 3/4 of the way through the breast. Be careful to not cut to the bottom.
Cut slits (about 1/2 inch apart) across the chicken breast, about 3/4 of the way through the breast(careful not to cut all the way through).
Stuff the spinach and ricotta cheese mix inside the cuts of the chicken. Sprinkle with salt and pepper to your taste. Then sprinkle the grated cheddar cheese on top. Add a dash of paprika over top.
Next is to bake it. Place the hasselback chicken into a baking dish and bake for 20 to 25 minutes, or until the chicken is fully cooked.
